Here’s a quick recipe to beat the heat. And unlike with a pressed or filtered juice, this is all blended together so you don’t lose any of the fiber or other nutrients in the fruit, which as a bonus, will prevent a big spike in your blood sugar. Enjoy in good health!
Pineapple Mint Magic
Makes: 2 servings
2 cups ripe pineapple
leaves of 2 sprigs of fresh mint (about 10 leaves)
1/2 small green or red apple, skin on
4 ice cubes
juice of 1 lemon
Blend all together until smooth. Enjoy on the rocks or neat
