Chipotle Cranberry Sauce
Adapted from Bon Appetit 2009
Yield: about 2 cups
Ingredients
1-2 chipotles in adobo
1 12-ounce package fresh or frozen cranberries
3/4 cup sugar
juice of 1 lime
1 small garlic clove, minced
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
Technique
- Chop chipotles, then add to a heavy medium saucepan along with cranberries, sugar, and lime juice over medium heat until sugar dissolves. Continue cooking until cranberries begin to pop, stirring and smashing cranberries as they cook and release their juices, about 5 minutes.
- Stir in garlic, cinnamon, and cumin. Simmer until sauce thickens slightly and flavors meld, stirring often, about 5 minutes. Cool.
