Piña Kaleada
Serves: 2
Ingredients
1/2 cup coconut milk + 1/2 cup water, or 1 cup light coconut milk
11/4 cups cubed fresh pineapple
1 cup baby kale
2 ice cubes
1/2 frozen banana, sliced (optional, if your pineapple isn’t very sweet)
Method
Place all ingredients in a high-speed blender and blend until smooth. Pour into two glasses, umbrella optional.
Nutrition highlights
Pineapples are not only tropical, sweet and juicy but they are an excellent source of vitamin C and antioxidants. They also contain an enzyme, bromelain, which helps with digestion and inflammation.
Kale is full of fiber, iron, magnesium, potassium, vitamins A, C, K and B vitamins, plus lots of antioxidants.
