Thank you so much for including my Aloha Pineapple Kimchi recipe in it— because we can all use a little aloha right now! Everyone get your copy! And just like that… this year’s #culinarymedicine elective at @kpmedschool is over! The month really whizzed by. I am so fulfilled by the learning, skill development, engagement, and reflections from these soon-to-be doctors. And not to mention, some delicious food at their final/potluck!  I am so proud that they made a very culturally diverse vegetarian menu including orange tofu (a healthier remake of popular fast food), a chickpea curry (beans and greens with turmeric and black pepper IYKYK), mujadara (from a student who until only a few years ago ate mainly chicken nuggets and other “kid food”), a protein pasta with radishes and radish top pesto (to reduce food waste), and palak paneer (to honor the cultural diversity of his hometown). They got the memo!
