Choco-Banana Oatmeal

It’s National Oatmeal Day today and it was National Chocolate Day yesterday, so I thought it’s about time I shared my favorite quick and delicious breakfast. Seriously, I can make this on a school/work day in the amount of time it makes me to throw together the kids’ lunches– about 5 minutes.  And it is so good, almost like dessert, but with no added sugar, and unless you add a non-nut milk, vegan as well.  This is a breakfast pleasure, without any guilt.  If you’d like the nutrition specifics, this is made of gluten-free whole grains, has potassium from the the bananas, anti-oxidant flavonoids from the cocoa powder, more anti-oxidants and vitamins from the berries and protein and healthy fats from the nuts.  It’s all good, so, so good!

Choco-Banana Oatmeal

Serves 2-3

Ingredients

1 cup rolled oats

2 very ripe bananas, mashed

1 cup water

2-3 tablespoons cocoa powder

optional garnishes:

fresh strawberries, quartered or fresh raspberries

toasted chopped hazelnuts or almonds

milk (regular or nut milk)

no sugar added!

Technique

  1.  Add oats, bananas, water and cocoa powder to a saucepan.  Stir and bring to a low boil over medium heat, stirring often.  Cook for about 5 minutes, to your desired consistency, mashing bananas as you stir.  Add more water if desired .  Add nuts and stir in, or sprinkle on top as a garnish.
  2. Garnish with berries and nuts, and if you like, top with a drizzle of milk or nut milk.
