Healthy Thanksgiving: a Cornucopia of Vegan Sides

What do you think of when you think of Thanksgiving? A family reunion? The Turkey? Football?  For most of us, it is at least one of the above.  But it can also be the start of a slippery slope of “holiday eating,” when any healthy habits you might have been working hard to form disappear with each spoonful of gravy and each slice of pie.  And I am not against a tradition which is one of my favorite family holidays.  But for those of you who are looking for a healthier, perhaps plant-based or vegan alternative, some new side dish options, or simply something new, here is a roundup of some healthier dishes you might want to include on your Thanksgiving table.  Happy Thanksgiving to you and your loved ones!

Smoky Roasted Cauliflower Steak (better than Tofurkey TM!)

Umami Gravy (forget that it’s vegan– it’s the best gravy you’ll ever have!)

Spicy Cranberry Apple Relish (throw out your jellied cranberry sauce!)

Roasted Carrots with Carrot Top Pesto (beautiful, delicious, and uses the whole carrot)

Thanksgiving Couscous (stuffing alternative)

Gateway Brussels Sprouts (I’ll make a Brussels sprouts lover of you)

Jewel Box Salad (sweet and savory and really pretty)

Kale Salad with Roasted Root Vegetables (yams without the marshmallows!)

And don’t forget dessert!

Spiced Cranberry Apple Crisp

Vegan Pumpkin Pie (also better than the original)
