Spicy Nectarine-Tomato Salad for a LetsLunch Picnic

Summer means picnics and so this month, LetsLunch, a monthly potluck on Twitter, is heading outdoors for a meal.

This is one of my favorite salads because of it captures the best of summer produce– stone fruits and tomatoes, is simple and has a surprising combination of zesty flavors.  The sharp bite of red onion slivers, chili pepper, cilantro, and lime provide a wonderful contrast to the sweetness of the fruit.  It’s a flexible salad and you could substitute whatever stone fruit you have and any variety of tomato. Just make sure both are ripe– the juices make the dressing.

Nectarine and Tomato Salad

Serves: 8



4 ripe nectarines

4 plum tomatoes

2-3 tbsp red onion, cut into very thin slivers

red pepper flakes, to taste

2 pinches Kosher salt

3-4 tbsp minced cilantro

juice of 1 large or 2-3 small limes



1. Slice nectarines and tomatoes into 1/2 inch wedges.

2. Top with remaining ingredients and toss. Allow to sit for at least 10 minutes and toss again before serving.


Nutrition Info: 38 calories, 9g carbs, 0g fat, 1 g protein, 37mg sodium, 7g sugar
